Midweek randoms

  • Molly's ACL tear is healing. It's not 100%, but she gets to start slowly being active again. If she limps at all, it's straight to surgery next time. Fingers crossed for no doggy medical expenses!

  • When Kara and Greg came to visit (Guest Weekend 1 of 4  ;), they brought an adorable basket of goodies for us to include, a puzzle for Grace, Starbucks K-Cups, doggy treats, and more. My favorite addition: Wine Cube. They got us the Cab Sav/Shiraz and it was one of the best reds I've had in awhile. New problem? My Target doesn't sell them!

  • I started/finished book 3 of the Hunger Games series last night...now I just need to convince D to see the movie with me. So far, not going well.

  • G used the potty again (I'll stop updating you every time she pees, but for now it's still new and exciting). Her 18 month appointment went well. More on her stats tomorrow.

  • One of my besties, Samantha, bought her plane tickets to come visit later this month! Apparently beg ask for visitors and you shall receive!
An oldie, stolen from Dara...it's good to be back on Facebook, haha :)

  • I can't make a green smoothie to save my life. I try a couple times a week and mine turn out completely disgusting looking. Tastes great, looks like sewage. What gives?

  • I am going to buy a treadmill today if it is the last thing I do...and it may be the last thing I do when D comes home and kills me for buying one. Muahaha! ;)

  • We are trying a new church for Easter mass. It's been awhile. Pray that we don't all catch fire upon entering the building.

  • My in-laws get here tomorrow and my house looks pretty anti-company ready right now. Off to start dealing with it between work, etc. Lets be real, my OCD, clean loving husband will really do most of the work. SO lucky to have him...match made in heaven!
xo,

  1. Hi.

    Paleo Chili:

Chop 1 medium yellow onion, 4-5 stalks of celery and 1 green pepper. Saute for 1-2 minutes in coconut oil. Remove from pan. Set aside. They will continue to cook.
Add meat to pan. I use 1.3 lbs of turkey. Sprinkle 3 t chili powder, 2 t cumin and 1 t garlic powered onto raw meat. Then, brown. About half way in, add back the veggies so that everything is cooking together.
Once the meat is brown, add in 2 cans of diced tomatoes, 1 can of diced green chiles and about 1 cup of salsa. Stir.
Cook on low heat...a simmer for about 30 minutes. Done!

This stuff is WAY better the next day. Makes great leftovers!
