Weekend recap and lame pie jokes

Well hello, Tuesday!

Love skipping over the usual Monday drag with a three day weekend. It already feels like the week is flying by.

First, a brief weekend recap:

  • Mexican Takeout...because yes, you can pick up your order from my fave local place and it's so much more relaxing to eat at home where people don't give you the stink eye when your one year old throws a handful of rice on the floor. (In fact, people...err dogs...actually encourage the food toss.)
  • The FAIR...which was a dud. More on this later. For now I'll just go with, "If you can't say anything nice, don't say anything at all."
  • Starbs (aka Starbucks) treats. Giant chocolate chip cookies are for sharing. :)
  • Grilling out in gorgeous weather
  • Big girls deciding they are big enough to want to sit alone on patio furniture that is on top of a concrete surface. Sometimes they stand up because it's funny to see all of the color drain from mom's face...
  • Sam's Club runs full of free samples and a giant $20 piece of salmon. YUM.
  • Banana Pudding flavored frozen yogurt. SCORE.
  • 3 days worth of blissful outdoor running.
  • A new fave workout song.
and just like that the three days were over. Back to the daily grind and now officially less than 2 months until we MOVE. It can't come soon enough.

I had one of those great mornings where I woke up completely alert at 5:30 am when D was getting ready to head out to PT. I lounged in bed for another half hour or so and listened to Grace sleeping on the monitor. Girlfriend is a heavy breather. Then I got to eat breakfast, get our clothes together for the day, and make her morning bottle before she was up. By about 6:30 I peeked in Grace's room to check on her and she popped up smiling. I wish I could wake up half as happy as she does. We played, got dressed, she demanded we go outside (this involves yelling "MAMA!" very authoritatively while pointing at the back door. I'm kind of a sucker.), and we still made it out the door to daycare early enough that I threw on some running shoes and got a quick jog in before heading home to work. It was an awesome start to the day.

I'm already looking forward to spin this afternoon, but this morning's run was definitely needed after the indulging I did this weekend. I try to make at least one new recipe a week, whether it be dinner or something baked. If it's a hit a sometimes I post the recipe here, like these Pumpkin Spice Cookies- aka heaven in your mouth. If it doesn't go over well I just don't talk about it...notice how many weeks I don't post a recipe? :)

This weekend's baking experiment is what I would call a hit. I'm pretty sure I ate 7 of these yesterday. Seven. I just kept walking away and then coming back to them throughout the day. Needless to say, they were good and the recipe is a keeper...but I won't be making it again until I have more people at home than just D, Grace, and I. For the record, D finished the rest of them and Grace even had one. :)



Raspberry Cream Muffins

Ingredients
1 cup fresh raspberries
3/4 cups sugar,divided
1/4 cup butter, softened
1 egg
1 teaspoon almond extract
1/2 teaspoon vanilla extract
2 1/4 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup half-and-half
1 cup finely chopped vanilla or white chips

Directions
Preheat oven to 375 degrees.  In a small bowl, toss raspberries with 1/4 cup sugar; set aside. In a large mixing bowl, cream butter and 1/2 cup sugar. Beat in egg and extracts. Combine the flour, baking powder and salt; add to creamed mixture alternately with half and half. Carefully stir in the chips and raspberries.  Fill greased or paper-lined muffin cups three-fourths full.  Bake for about 25 minutes or until a toothpick comes out clean.


Easy as pie! Except they're muffins...and now I want pie. (Good joke, Heather.)


The rest of the week looks pretty standard...nothing too crazy going on. We're just really trying to enjoy our last couple of months here and the beautiful weather is definitely helping. It's been in the upper 80's and it seems like Fall is right around the corner even though season-wise, it's already here. I've always put off things like decorating for the holidays because of various reasons...we are going home for Christmas, or last year I just had Grace and could hardly manage getting through a normal weekday. This year I started to tell myself that it wasn't worth it because of the upcoming move, but I think I might try to get festive for the next month or so since we will be here for Thanksgiving. So I guess that is a tiny goal for this week. We'll see how it goes. :)

Any Fall decorating suggestions? I'm up to my eyeballs in Pinterest and blog inspiration. Seriously makes me crave some more baked treats. Mmmm...
