It must be nice being a stay-at-home dad, losing track of days and all. ;) I'm still loving 2012 and am off to a productive start. Mostly thanks to one of my favorite Christmas gifts...

Yesterday flew, and by 4:30 I was revved up and ready to hit the track for a run followed by a new video later in the evening. I got a couple new workout videos for Christmas (to include a kettlebell as well as some yoga stuff, and new Lulu pants...so spoiled), but when D and I hit Best Buy for some after holiday sales, I saw several Jillian Michaels videos for a steal and walked away with Shred It with Weights, to use with my new kettlebell and 6 Week Six Pack.
I figure that I can always use a quick ab workout, so I'm most excited to add this to my weekly routine. After I made it on post last night and ran a quick errand, it was already starting to get dark and cold, so my run went downhill fast...as did my motivation. Not much to report on here, other than the fact that it only adds to my list of reasons why I need to change my work schedule and get done earlier in the day. Another reason I need to get my day finished earlier is that I would love to get dinner on the table before it's closing in on 7pm and Grace starts getting exhausted.
Last night's dinner, however? Worth waiting for. It was all sorts of awesome.

Beef and Sweet Potato Turnovers (by Real Simple)
Hands-on Time: 15 minutes/Total Time: 45 mins/Serves 4
Ingredients:
1 T Olive Oil
1/2 lb Ground Beef
2 cloves garlic, chopped
1 sweet potato, grated
2 cups baby spinach
Kosher salt and black pepper
2 sheets of frozen puff pastry (one 17.3 ounce package, thawed)
2 ounces Cheddar, grated
1. Heat oven to 400. Heat the oil in a large skillet over med-high heat. Add the beef and cook until no longer pink. Stir in the garlic. Remove from heat.
2. Add the sweet potato, spinach, 1/2 tsp salt and 1/4 tsp pepper. Toss to combine.
3. Lay the pastry on a work surface and cut each sheet in half, forming a total of 4 rectangles. Dividing evenly, spoon the beef mixture, then the Cheddar, onto one side of each rectangle, leaving a 1/4 inch border.
4. Fold the dough over and filling and press firmly to seal the edges. Bake on parchment-lined baking sheet until golden brown, 20 - 25 minutes.

This was so easy and yummy that I had to share. I just served it with mixed veggies...A. Because I'm lazy like that and B. Because I'm all about presentation and needed some color on the plate. These were a hit with all of us and I'm definitely going to have to add them to our meal rotation.
Day 1 of rocking 2012? I'd call it a semi-success. I plan on having a better workout today and will let you know how the new DVDs go. I also have some interesting kettlebells plans in the works for later this month that have me motivated.
As for Day 2, we have this oldie on tap for tonight. Remember the last time I made it? It was when we had our lovebird house guests with us. Tonight should be a lot more low key and a lot less gag inducing. ;) I'm off to throw it all in the crockpot and get on with my day! Check ya later.

Ummm ... I worship my Keurig every morning when it brews me my cup of coffee STATE. Haha.

You crack me up! Tell D he's not the only one as a) I've been wondering if it's Thursday myself or Monday or what? and b) Hub just slept til 11am and then asked outloud what in the world he should do with himself today----welcome to the life of a college student again. Now he's "saving the world" aka playing some fake war game. ;) He's been saving the world a lot lately, but he's happy which makes me happy!
